Ingredients

Scale

Main Ingredients

  • 3 medium Yukon Gold or Russet potatoes (about 1.3 lbs), thinly sliced, skin-on or peeled
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon paprika (smoked or sweet)
  • 1 teaspoon dried herbs (such as thyme, rosemary, or Italian seasoning, optional)

Optional Toppings

  • 2 tablespoons freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley or chives
  • Sour cream or Greek yogurt, for serving

Instructions

  1. Wash and slice potatoes: Thoroughly wash and dry the potatoes. Leave the skins on for added texture and fiber or peel them if preferred. Slice the potatoes into 1/8-inch rounds using a mandoline or sharp knife for even cooking.
  2. Soak potato slices (optional): To remove excess starch and improve crispiness, soak the sliced potatoes in a bowl of cold water for 5-10 minutes. Drain and pat them completely dry with paper towels.
  3. Toss potatoes with seasoning: In a large mixing bowl, toss the potato slices with olive oil, sea salt, freshly ground black pepper, garlic powder, paprika, and dried herbs until they are evenly coated with the seasoning.
  4. Preheat air fryer: Preheat your air fryer to 400°F (205°C) for 2 minutes to ensure it is hot and ready for cooking.
  5. Arrange potato slices: Place the potato slices in a single layer in the air fryer basket, slightly overlapping if necessary, but avoid overcrowding to allow proper air circulation.
  6. Air fry the potatoes: Cook the potato slices at 400°F for 10 minutes, then flip them or shake the basket to ensure even cooking. Continue air frying for an additional 2-4 minutes until the potatoes turn golden brown and crispy at the edges.
  7. Remove and monitor crispiness: As some slices become crispy, remove them from the basket to prevent burning. Continue cooking the remaining slices as needed. If slices stick to the basket, shake the basket halfway through the cooking time to release them.
  8. Serve and garnish: Transfer the crispy potato slices to a serving plate. Sprinkle with freshly grated Parmesan cheese and chopped fresh herbs, such as parsley or chives, if desired. Serve hot with your favorite dip like sour cream or Greek yogurt.

Notes

  • Soaking sliced potatoes helps remove excess starch, resulting in crispier potatoes.
  • Do not overcrowd the air fryer basket to ensure even cooking and crispiness.
  • Adjust the cooking time based on the thickness of the slices and the power of your air fryer.
  • For extra flavor, try different dried herbs or add a sprinkle of chili powder for a spicy kick.
  • Leftovers can be stored in an airtight container and reheated in the air fryer to retain crispiness.
