Sweet Potatoes
- 2–3 medium sweet potatoes (about 3.5 cups peeled and cubed)
Seasoning and Oil
- 2 tablespoons extra virgin olive oil (or olive oil cooking spray)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- Prepare the sweet potatoes: Wash and dry the sweet potatoes. Use a vegetable peeler to remove the skin. Cut the potatoes into cylinders and then into even 1/2–3/4 inch cubes.
- Season: Place the cubed sweet potatoes in a medium mixing bowl. Drizzle with olive oil. In a small bowl, mix paprika, garlic powder, kosher salt, and black pepper. Sprinkle this seasoning mixture over the potatoes and toss well to coat everything evenly.
- Preheat the air fryer: Set your air fryer to 400°F. If it has no preheat option, run it empty for 2-3 minutes to warm up the basket.
- Air fry the sweet potatoes: Spray the air fryer basket with cooking spray. Place the sweet potatoes in an even single layer in the basket. Shake to distribute them evenly. Cook for 14-17 minutes, shaking or flipping halfway through. For small air fryers, cook in batches.
- Serve: After cooking, turn off the air fryer and let the sweet potatoes rest inside for 3-5 minutes to crisp up further. Serve warm and enjoy this flavorful, crispy side dish.
Notes
- Use evenly sized cubes for uniform cooking and crispiness.
- Adjust seasoning to your taste preference or add other spices like cumin or chili powder for variation.
- If cooking in batches, keep cooked cubes warm in a low oven to serve all at once.
- Olive oil spray can reduce oil usage but ensure to coat the cubes evenly.
- Sweet potatoes are best eaten fresh but can be refrigerated and reheated for up to 2 days.
