Ingredients

Scale

Dry Ingredients

  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup (240g) Greek yogurt
  • ¾ cup (150g) packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Fruit

  • 1½ cups peeled and diced apples (about 2 medium apples)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking when your batter is prepared.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt to evenly distribute the leavening and spices.
  3. Combine wet ingredients: In a separate bowl, whisk the Greek yogurt, brown sugar, eggs, and vanilla extract until the mixture is smooth and well blended.
  4. Fold wet and dry mixtures: Pour the wet mixture into the dry ingredients and gently fold them together with a spatula, being careful not to overmix. Then fold in the diced apples, ensuring they are evenly distributed throughout the batter.
  5. Fill muffin tin: Scoop the batter into a muffin tin lined with paper liners or lightly greased, filling each cup about ¾ full to allow room for rising.
  6. Bake the muffins: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be golden on top.
  7. Cool the muffins: Let the muffins cool in the tin for 5 minutes to set, then transfer them to a wire rack to cool completely before serving to avoid sogginess.

Notes

  • Use firm, tart apples such as Granny Smith for the best balance against the sweetness.
  • Do not overmix the batter to keep the muffins tender and light.
  • For a dairy-free version, substitute Greek yogurt with a plant-based yogurt.
  • These muffins freeze well; store in an airtight container for up to 2 months.
  • Adding a sprinkle of cinnamon sugar on top before baking creates a crunchy topping.
