  • 2 to 3 tablespoons soy sauce
  • 1 tablespoon oil (plus more as needed)

Instructions

  1. Prepare Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth and well combined. Set this sauce aside for later use.
  2. Cook the Chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the diced chicken, season with salt and pepper, and cook for 5 to 6 minutes until browned and cooked through. Remove the chicken from the pan and set aside.
  3. Scramble the Eggs: In the same pan, pour in the beaten eggs and scramble them until they are just set but still moist. Remove the eggs and set aside with the chicken.
  4. Sauté Vegetables: Add a little more oil if needed, then sauté the diced carrots and minced garlic in the pan for 2 to 3 minutes until softened. Stir in the green peas and cook for an additional minute.
  5. Stir-Fry the Rice: Add the cold cooked rice to the pan, breaking up any clumps. Stir-fry the rice on high heat for 3 to 4 minutes, allowing it to become slightly crispy.
  6. Combine Ingredients: Return the cooked chicken and scrambled eggs to the pan with the rice. Stir everything together thoroughly. Add 2 to 3 tablespoons of soy sauce, mixing evenly to season the dish.
  7. Add Bang Bang Sauce: Pour the prepared bang bang sauce over the rice mixture. Stir well so that all ingredients are coated and warmed through.
  8. Garnish and Serve: Sprinkle sliced green onions over the fried rice and serve immediately while hot.
