Ingredients

Scale

Chicken & Sauce

  • 1 lb (450g) chicken breast, cooked and shredded
  • 1 tablespoon olive oil
  • ½ cup BBQ sauce (your favorite brand)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

Mac and Cheese

  • 8 oz (225g) elbow macaroni or pasta of choice
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup milk (low-fat preferred)

Garnish

  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the elbow macaroni according to the package instructions until al dente. Drain well and set aside.
  2. Warm the Chicken: Heat the olive oil in a large skillet over medium heat. Add the shredded cooked chicken and cook for 2-3 minutes, stirring occasionally, until warmed through.
  3. Prepare BBQ Chicken Mixture: Stir in the BBQ sauce, garlic powder, onion powder, smoked paprika, salt, and pepper into the chicken. Mix thoroughly so the chicken is evenly coated with the flavorful sauce.
  4. Make Cheese Sauce: In a separate saucepan, heat the milk over medium heat. Gradually stir in the shredded cheddar and mozzarella cheeses, stirring continuously until the cheese melts completely and the sauce is smooth and creamy.
  5. Combine Pasta and Cheese Sauce: Add the cooked pasta into the cheese sauce and stir well to coat every piece of macaroni with the creamy cheese.
  6. Mix in BBQ Chicken: Fold the BBQ chicken mixture into the cheesy pasta, stirring gently but thoroughly to combine all the ingredients evenly.
  7. Season and Serve: Taste the mac and cheese and adjust seasoning with salt and pepper as needed. Serve hot, garnished with freshly chopped parsley if desired.

Notes

  • You can use rotisserie chicken or leftover cooked chicken for convenience.
  • Feel free to use your preferred pasta shapes if elbow macaroni is unavailable.
  • For a smoky kick, add a bit more smoked paprika or a dash of hot sauce.
  • To make it creamier, add a splash of cream or extra milk when making the cheese sauce.
  • Leftovers reheat well in the microwave or on the stovetop with a splash of milk to loosen the sauce.
