  • 1/2 tablespoon fresh rosemary, finely chopped
  • 1/2 tablespoon fresh thyme
  • 1/4 teaspoon red chili flakes
  • 1/2 teaspoon salt
  • 1 tablespoon tomato paste
  • 1 can (400 g / 14 oz) crushed tomatoes
  • 1 can (400 g / 14 oz) black beans, drained and rinsed
  • Fresh parsley, finely chopped (for garnish)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of water to a boil, add a generous amount of salt, and cook the pasta according to the package instructions. Before draining, reserve 1-2 cups of the pasta cooking water for later use.
  2. Sauté vegetables: While the pasta cooks, heat olive oil in a large, deep pan over medium heat. Add the finely diced onion, grated carrot, and chopped red bell pepper. Cook for 5-6 minutes until the vegetables are softened.
  3. Add herbs and spices: Stir in the chopped garlic, fresh rosemary, fresh thyme, red chili flakes, and salt. Continue cooking for an additional minute to release the flavors.
  4. Prepare the sauce: Mix in the tomato paste, crushed tomatoes, black beans, and 1 cup of the reserved pasta water. Stir to combine everything evenly.
  5. Simmer the sauce: Bring the mixture to a boil, then cover the pan with a lid. Reduce the heat and let it simmer gently for 10 minutes, allowing the flavors to meld.
  6. Adjust sauce thickness: If you prefer a thicker sauce, use a potato masher to mash some of the black beans in the pan, creating a creamier texture.
  7. Combine pasta and sauce: Add the cooked pasta to the sauce pan and toss thoroughly to coat all the pasta with the flavorful sauce.
  8. Finish and serve: Stir in freshly chopped parsley for a bright, fresh note. Season with additional salt and freshly ground black pepper to taste and serve immediately while hot.
