- 12 ounces pepper jack Velveeta, cut into cubes
- 1½ cups milk
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup sour cream
- Brown the Beef: In a 3-quart saucepan, cook the ground beef over medium-high heat until browned. Drain the excess fat and set the beef aside.
- Sauté Vegetables: Using the same saucepan, melt 1 tablespoon of butter over medium heat. Add chopped onion, shredded carrots, diced celery, dried basil, and dried parsley flakes. Cook, stirring occasionally, until vegetables are tender, about 10 minutes. Press the garlic cloves into the pot and stir for about 1 minute until fragrant.
- Simmer Soup Base: Add chicken broth, diced potatoes, and the browned beef back into the saucepan. Bring the mixture to a boil. Once boiling, reduce heat to low, cover, and let simmer for 10-12 minutes until potatoes are tender.
- Make Roux: While the soup simmers, melt the remaining 3 tablespoons of butter in a small skillet. Stir in the flour and cook, stirring constantly, for 3-5 minutes until the mixture is bubbly and lightly golden. Pour this roux into the simmering soup and bring it back to a boil. Cook, stirring, for 2 minutes to thicken the soup.
- Add Dairy and Finish: Lower the heat to low and stir in the pepper jack Velveeta cheese cubes, milk, salt, and black pepper. Cook and stir until the cheese is completely melted and the soup is smooth. Remove the pot from heat and blend in the sour cream for extra creaminess before serving.
