Crust:
- 1 cup all-purpose flour
- 1/2 cup butter, softened
- 1 1/2 cups finely chopped pecans, divided
- Pinch of salt (omit if using salted butter)
Layers:
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 16 ounces whipped topping (Cool Whip), divided
- 2 (3.9 ounce) boxes instant chocolate pudding mix
- 3 cups whole milk
- Preheat Oven and Prepare Baking Dish: Preheat your oven to 300 degrees F. Prepare a 13×9-inch baking dish for the crust.
- Make the Crust Mixture: In a medium bowl, mix together the all-purpose flour, softened butter, 1 1/2 cups chopped pecans, and a pinch of salt until combined. The mixture will be clumpy and loosely stick together. You can also use a food processor for this step.
- Form and Bake the Crust: Press the crust mixture evenly into the bottom of the baking dish in a single layer. Bake in the preheated oven for 20 to 25 minutes until the crust is light golden brown. Remove from the oven and allow it to cool completely.
- Prepare the Cream Cheese Layer: Using a hand mixer and a large bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy. Gently fold in 8 ounces of whipped topping using a rubber spatula until combined.
- Layer the Cream Cheese Mixture: Spread the cream cheese and whipped topping mixture evenly over the cooled crust to create the second layer.
- Make the Chocolate Pudding: In a large bowl, whisk together the two boxes of instant chocolate pudding mix and 3 cups of whole milk with an electric mixer on medium speed for 2 minutes until the pudding is well combined and slightly thickened.
- Layer the Pudding: Spread the chocolate pudding evenly over the cream cheese layer to create the third layer.
- Add the Whipped Topping and Pecans: Spread the remaining 8 ounces of whipped topping evenly over the pudding layer. Sprinkle the remaining chopped pecans on top for garnish.
- Chill the Dessert: Place the assembled dessert in the refrigerator and chill for 2 to 3 hours to allow the layers to set properly.
- Serve and Store: Serve the Chocolate Delight immediately after chilling. Store any leftovers covered in the refrigerator for up to 3 days.
Notes
- Make sure the crust is completely cooled before adding the cream cheese layer to prevent melting and mixing of layers.
- For best results, use whole milk for the pudding to achieve a richer texture.
- You can substitute pecans with walnuts if preferred.
- Use salted butter and omit the added salt if desired.
- Chilling time is essential to allow the dessert to set and flavors to meld.
- Consume within 3 days for optimal freshness and quality.
