Crust:

  • 1 cup all-purpose flour
  • 1/2 cup butter, softened

Layers:

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 16 ounces whipped topping (Cool Whip), divided
  • 2 (3.9 ounce) boxes instant chocolate pudding mix
  • 3 cups whole milk

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 300 degrees F. Prepare a 13×9-inch baking dish for the crust.
  2. Make the Crust Mixture: In a medium bowl, mix together the all-purpose flour, softened butter, 1 1/2 cups chopped pecans, and a pinch of salt until combined. The mixture will be clumpy and loosely stick together. You can also use a food processor for this step.
  3. Form and Bake the Crust: Press the crust mixture evenly into the bottom of the baking dish in a single layer. Bake in the preheated oven for 20 to 25 minutes until the crust is light golden brown. Remove from the oven and allow it to cool completely.
  4. Prepare the Cream Cheese Layer: Using a hand mixer and a large bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy. Gently fold in 8 ounces of whipped topping using a rubber spatula until combined.
  5. Layer the Cream Cheese Mixture: Spread the cream cheese and whipped topping mixture evenly over the cooled crust to create the second layer.
  6. Make the Chocolate Pudding: In a large bowl, whisk together the two boxes of instant chocolate pudding mix and 3 cups of whole milk with an electric mixer on medium speed for 2 minutes until the pudding is well combined and slightly thickened.
  7. Layer the Pudding: Spread the chocolate pudding evenly over the cream cheese layer to create the third layer.
  8. Add the Whipped Topping and Pecans: Spread the remaining 8 ounces of whipped topping evenly over the pudding layer. Sprinkle the remaining chopped pecans on top for garnish.
  9. Chill the Dessert: Place the assembled dessert in the refrigerator and chill for 2 to 3 hours to allow the layers to set properly.
  10. Serve and Store: Serve the Chocolate Delight immediately after chilling. Store any leftovers covered in the refrigerator for up to 3 days.
