These Cranberry Brie Bites are delightful mini pastries perfect for entertaining or as a festive appetizer. Featuring flaky puff pastry topped with melted creamy Brie and a tangy cranberry sauce, garnished with fresh thyme, they bring together sweet and savory flavors in every bite.

Puff Pastry

  • 400 g (14 oz) ready-rolled puff pastry
  • 1 egg (lightly whisked, for egg wash)

  • 150 g (5.3 oz) Brie cheese, sliced
  • 6 tbsp cranberry sauce
  • Fresh thyme leaves, to decorate

Instructions

  1. Preheat Oven: Preheat your oven to 200C/400F (fan) and line a baking tray with baking parchment or a silicone liner to prevent sticking.
  2. Prepare Pastry Rectangles: Unroll the puff pastry and lightly brush it with the whisked egg wash; this will help the layers stick and give a nice golden color when baked. Cut the pastry into approximately 40 small rectangles.
  3. Create Doubled-Up Pastry: Place one pastry rectangle on top of another to form about 20 ‘doubled up’ rectangles; this layering will help create a puffed texture when baked.
  4. Bake Pastry Bases: Arrange the doubled rectangles on the prepared baking tray and bake in the preheated oven for 10 minutes until they rise and start to turn golden. Then remove the tray from the oven.
  5. Add Brie and Melt: Slice the Brie into small pieces and place a slice on top of each pastry puff. Return the tray to the oven for 1-2 minutes, just enough to melt the Brie slightly without overcooking.
  6. Garnish and Serve: Remove the bites from the oven, top each with a small dollop of cranberry sauce and a few fresh thyme leaves for a burst of flavor and color. Serve immediately while warm.

  • You can substitute fresh cranberries cooked down with sugar if cranberry sauce is unavailable.
  • For a stronger cheese flavor, choose a ripe Brie or double the cheese amount accordingly.
