Instructions

  1. Combine Cream Cheese and Butter: In the bowl of a stand mixer or a large mixing bowl if using an electric mixer, beat the softened cream cheese and butter together until the mixture becomes creamy and smooth.
  2. Add First Portion of Sugar: On low speed, gradually add 2 cups (250g) of powdered sugar to the mixture, stirring continuously until fully incorporated and the texture becomes thicker.
  3. Add Flavor Extracts: Mix in the peppermint extract and vanilla extract thoroughly to infuse the dough with a refreshing mint flavor with a hint of vanilla.
  4. Incorporate Remaining Sugar: Gradually add the remaining powdered sugar while stirring on low speed. Occasionally pause to scrape down the sides and bottom of the bowl. The dough should become very stiff and not sticky; if still sticky, add more powdered sugar until a play-dough-like consistency is achieved.
  5. Add Food Coloring (Optional): If coloring the mints, either beat one color thoroughly into the dough using the mixer or divide the dough into separate bowls to mix in different colors individually until well incorporated.
  6. Shape the Mints: Roll teaspoon-sized portions of the dough between your palms until smooth. Place the mints onto a baking sheet lined with wax paper. Dip the tines of a fork in powdered sugar and press gently but firmly down on each mint to imprint a pattern.
  7. Dry the Mints: Set the shaped mints at room temperature for several hours until they dry through and become firm to the touch, not squishy or soft.
