Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the assembled spaghetti dish.
  2. Cook the Chicken: Slice each chicken breast in half lengthwise to create thinner pieces. Pat them dry, then season lightly with salt, pepper, and Italian seasoning. Heat the olive oil in a skillet over medium-high heat and sear the chicken for 5-6 minutes on each side until cooked through. Remove from heat and dice into bite-sized pieces once cool enough to handle.
  3. Prepare the Sauce Base: Lower heat to medium-low and melt the butter in the same skillet, scraping up any browned bits (fond) left from the chicken. Add the diced onion and cook until softened, about 4 minutes, then add the minced garlic and cook for an additional minute.
  4. Make the Roux: Sprinkle the flour evenly over the cooked onions and garlic. Stir and cook for about 2 minutes until the raw flour smell disappears, ensuring a smooth roux base.
