Ingredients

Scale

Bean Layer

  • 1 16 ounce can refried beans
  • 1 10 ounce can Rotel tomatoes and green chilies, drained
  • 1 tablespoon taco seasoning

Guacamole Layer

  • 3 medium avocados, peeled and seeded
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • ¼ cup chopped fresh cilantro
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground cayenne pepper

Cream & Toppings

  • 1 ½ cups sour cream
  • 2 cups finely shredded cheddar cheese and Monterey Jack cheese blend
  • ½ cup sliced black olives
  • 1 cup diced cherry tomatoes (or grape or Roma tomatoes)
  • ⅓ cup sliced green onions

Instructions

  1. Prepare Bean Layer: In a medium bowl, combine the refried beans, drained Rotel tomatoes with green chilies, and taco seasoning. Mix well to evenly distribute the flavors. Spread this bean mixture evenly into the bottom of a 7 x 11-inch casserole dish to form the base layer.
  2. Make Guacamole Layer: In a separate bowl, mash the peeled and seeded avocados using a fork or potato masher. Add lime juice, minced garlic, chopped cilantro, onion powder, salt, and cayenne pepper. Mix thoroughly until all ingredients are well combined. Spread this guacamole mixture gently over the bean layer, ensuring an even topping.
  3. Add Sour Cream Layer: Carefully spoon and spread the sour cream evenly over the guacamole layer, taking care not to disturb the previous layers.
  4. Top with Cheese and Vegetables: Sprinkle the finely shredded cheddar and Monterey Jack cheese blend evenly over the sour cream layer. Next, scatter sliced black olives, diced cherry tomatoes, and sliced green onions on top to add texture and fresh flavor.
  5. Chill the Dip: Cover the casserole dish with plastic wrap or a lid and refrigerate for at least 1 hour to allow the layers to set and the flavors to meld. Serve chilled with tortilla chips or your favorite dipping snacks.

Notes

  • For best results, use ripe avocados for the guacamole to ensure creaminess.
  • You can substitute taco seasoning with homemade seasoning blend if preferred.
  • Feel free to adjust the amount of cayenne pepper to suit your spice preference.
  • To streamline prep, you can prepare layers in advance and assemble before serving.
  • Serve with tortilla chips, celery sticks, or sliced bell peppers for a variety of dipping options.
