Meat and Vegetables
- 1 lb lean ground beef
- ½ cup onion (chopped)
- 1 garlic clove (minced)
- ½ cup green bell pepper (chopped)

- 1– 16 oz can refried beans
- 1– 10 oz can Rotel diced tomatoes with green chilies
- 1– 10.5 oz can cream of chicken soup
- ½ cup sour cream

- 2 ½ cups sharp cheddar cheese (divided)
- Preheat and Cook Beef: Preheat your oven to 350°F (175°C). In a medium Dutch oven or large skillet, cook the ground beef along with the chopped onion, minced garlic, and chopped green bell pepper over medium heat until the beef is no longer pink.
- Add Beans and Seasoning: Stir in the refried beans, diced tomatoes with green chilies, taco seasoning, salt, and pepper. Cook for about 5 minutes, stirring occasionally, until all ingredients are well combined and heated through.
- Prepare Soup Mixture: In a small bowl, whisk together the cream of chicken soup and sour cream until smooth. Spread half of this mixture evenly on the bottom of a 9×13-inch casserole dish.
- Layer Tortillas: Place three large corn tortillas in a single layer over the soup mixture in the casserole dish. Overlap and cut tortillas as needed to fill gaps.
- Add Meat Layer: Spoon half of the meat and bean mixture evenly over the tortillas.
- Top with Soup Mixture: Spread the remaining half of the cream of chicken and sour cream mixture over the meat layer.
- Add Cheese: Sprinkle half of the shredded sharp cheddar cheese evenly on top of the soup mixture.
- Repeat Layers: Repeat the layers by adding the remaining three tortillas, then the rest of the meat mixture, followed by the rest of the soup mixture, and finish by sprinkling the remaining cheese on top.
- Bake: Place the casserole in the preheated oven and bake for 20 minutes or until the cheese is fully melted and bubbly.

- Use lean ground beef to reduce excess fat and improve healthfulness.
- The cream of chicken soup can be substituted with cream of mushroom soup for a different flavor.
