Ingredients

Scale

Pizza Crust

  • 1 (13.8 oz) tube Refrigerated Pizza Crust
  • 2 tbsp Olive oil (divided)

Egg Mixture

  • 8 Eggs
  • 1/3 cup Milk
  • Salt and Pepper to taste

Toppings

  • 6 Pieces of Bacon (cooked and chopped)
  • 2 cups Shredded Cheddar Jack Cheese

Instructions

  1. Preheat the oven: Preheat your oven to 425 degrees Fahrenheit to ensure it’s ready for baking the crust and finishing off the pizza.
  2. Prepare the crust: Unroll the refrigerated pizza crust into a 15x10x1 inch sheet cake pan. Stretch the dough to fill the pan evenly and curl up the edges to create a crust edge.
  3. Brush and prick the crust: Lightly brush the crust with 1 tablespoon of olive oil and prick it all over with a fork to prevent bubbles from forming as it bakes.
  4. Par-bake the crust: Bake the crust in the preheated oven for about 7-8 minutes until it is lightly browned but not fully cooked.
  5. Prepare the egg mixture: In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  6. Cook scrambled eggs: Heat the remaining 1 tablespoon of olive oil in a medium skillet over medium heat. Pour in the egg mixture and cook gently until soft scrambled, stirring occasionally to achieve fluffy, creamy eggs.
  7. Assemble the pizza: Spoon the soft scrambled eggs evenly over the par-baked crust. Sprinkle the cooked and chopped bacon evenly on top, followed by the shredded cheddar jack cheese.
  8. Bake to finish: Return the assembled pizza to the oven and bake for an additional 7 minutes, or until the cheese has melted and is bubbly.

Notes

  • You can substitute bacon with sausage or turkey bacon for a different protein option.
  • Feel free to add vegetables like diced bell peppers, onions, or spinach for added nutrition and flavor.
  • Make sure not to overcook the scrambled eggs initially; they should be slightly undercooked to prevent dryness after baking.
  • To save time, cook bacon ahead and store it refrigerated until ready to top the pizza.
  • Use a cheese blend or mozzarella if preferred for a different flavor profile.
