These Easy Brownie Truffles are a decadent no-bake treat that combines rich, fudgy brownies with creamy cream cheese and a smooth chocolate coating. Perfect for parties or a sweet indulgence, these truffles are simple to make and decorated with colorful sprinkles for a festive touch.

Ingredients

Scale

Brownie Base

  • 1 (18 ounce) box of brownie mix (plus ingredients required on the box, typically eggs, oil, and water)

Truffle Mixture

  • 8 ounces full-fat, brick-style cream cheese (room temperature)

Coating

  • 3 cups chocolate melting wafers
  • Sprinkles for decorating

Instructions

  1. Prepare the brownies: Follow the package instructions for the brownie mix, baking the brownies in a 9×13 inch pan. Allow the brownies to cool completely before proceeding to the next step.
  2. Form the truffle base: Scoop out the soft interior of the cooled brownies into a large bowl, leaving behind the firmer edges. Add the room temperature cream cheese to the brownies and beat using a hand or stand mixer until fully combined and smooth with no lumps of cream cheese remaining.
  3. Shape the truffles: Roll the brownie-cream cheese mixture into 1 tablespoon-sized balls and arrange them evenly on a parchment-lined baking sheet. Place the baking sheet in the freezer for about 30 minutes, or until the truffles are completely solid and firm.
  4. Melt the chocolate coating: In a microwave-safe bowl, melt the chocolate wafers in 20 second increments, stirring between each interval until the chocolate is smooth and fully melted.
  5. Dip the truffles: Using a fork, dip each frozen truffle into the melted chocolate, ensuring it’s fully coated. Gently tap the fork against the edge of the bowl to remove any excess chocolate, then return the truffle to the parchment-lined sheet. Immediately decorate with sprinkles before the coating sets.
  6. Set the coating: Refrigerate the coated truffles for 15-20 minutes to allow the chocolate shell to harden completely. Once set, the truffles are ready to serve or store.

Notes

  • Ensure the cream cheese is at room temperature to blend smoothly with the brownie mixture.
  • Using brick-style cream cheese yields the best texture compared to whipped versions.
  • If chocolate melting wafers are unavailable, quality chocolate chips can be used, but consider adding a small amount of shortening or oil for a smoother melt.
  • Store finished brownie truffles in an airtight container in the refrigerator for up to one week.
  • For an extra flavor twist, you can add a splash of vanilla extract or espresso powder to the brownie mixture before rolling.
