This Garlic Butter Capellini Pomodoro with Shrimp is a light and flavorful Italian-inspired pasta dish combining tender shrimp, fresh tomato sauce, garlic, and fragrant basil. Shrimp

  • 1 lb. large shrimp
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for the pan

Pomodoro Sauce

  • 4 cloves garlic, minced
  • 4 cups diced fresh tomatoes or halved cherry tomatoes
  • 2 cups chicken or vegetable broth
  • 4 tablespoons butter
  • 1/2 cup fresh basil leaves, cut or torn into small pieces
  • Salt, to taste

Pasta & Garnish

  • 8 ounces DeLallo capellini
  • Parmesan cheese, for topping

Instructions

  1. Cook the Shrimp: Heat a swish of olive oil in a large skillet over medium heat. Season the shrimp with salt and pepper, then add to the pan. Cook until the shrimp turn pink, approximately 2 minutes per side. Remove the shrimp from the skillet and set aside.
  2. Prepare the Garlic Butter Pomodoro Sauce: In the same skillet, add a little more olive oil and heat over medium-low heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the diced or halved tomatoes and broth, then simmer for about 10 minutes. The tomatoes will break down and the sauce will begin to thicken.
  3. Cook the Capellini: While the sauce simmers, cook the capellini according to package instructions until al dente. Drain and set aside.
  4. Combine Sauce and Shrimp: Once the tomato sauce has thickened, stir in the butter and fresh basil. Continue to cook on low heat if you want the sauce thicker. Season with salt to taste. Add the cooked shrimp back to the skillet to warm through.
