For the Greek Chicken:
- 1 1/2 pounds boneless, skinless chicken breasts (680 g)

For the Tacos:
- 8 small flour or corn tortillas
- 1 cup cherry tomatoes, halved (150 g)
- 1 cup diced cucumber (150 g)
- 1/4 cup thinly sliced red onion (40 g)
- 1/4 cup chopped fresh parsley
- Extra lemon wedges for serving
For the Whipped Feta Sauce:
- 1 cup crumbled feta cheese (150 g)
- 1/2 cup plain Greek yogurt (120 g)
- 1 tablespoon olive oil (15 ml)
- 1 clove garlic
- 1 tablespoon fresh lemon juice (15 ml)
- Marinate the Chicken: In a bowl, combine olive oil, minced garlic, dried oregano, paprika, ground cumin, salt, black pepper, and lemon juice. Add the chicken breasts and coat them thoroughly with the marinade. Cover and let marinate for at least 20 minutes to allow the flavors to infuse.
- Cook the Chicken: Heat a skillet over medium heat. Place the marinated chicken breasts in the skillet and cook for 6 to 7 minutes on each side, or until they develop a golden brown color and reach an internal temperature of 165°F (74°C). Remove from heat and let the chicken rest for a few minutes before slicing it thinly.
- Make Whipped Feta Sauce: Add crumbled feta cheese, Greek yogurt, olive oil, a whole garlic clove, and fresh lemon juice into a food processor. Blend until the mixture is smooth, creamy, and well combined, creating a tangy, rich whipped feta sauce.
- Warm Tortillas: Heat the tortillas briefly in a dry skillet over medium-low heat until they become warm and pliable. This will make them easier to fold without breaking.
- Assemble Tacos: On each warmed tortilla, layer slices of the cooked chicken followed by halved cherry tomatoes, diced cucumber, thinly sliced red onion, and chopped fresh parsley. Generously spoon the whipped feta sauce over the top of the assembled ingredients. Serve with extra lemon wedges on the side for added brightness.
