Ingredients

Scale

Base Dough

  • 1 and 1/2 cups almond flour
  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips

Topping

  • 1 cup chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt, optional

Instructions

  1. Prepare the Dough: In a bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix thoroughly until evenly combined, then fold in 1/4 cup chocolate chips to distribute them throughout the dough.
  2. Shape the Bark Base: Lay parchment paper on a cutting board or large plate, then transfer the cookie dough onto the parchment. Use a silicone spatula or clean hands to firmly press and flatten the dough evenly to about 1/2-inch thickness. Set aside for topping.
  3. Melt the Chocolate Topping: In a small bowl, mix 1 cup of chocolate chips with 1 tsp coconut oil. Microwave the mixture in 30-second bursts, stirring in between, until the chocolate is completely melted and smooth.
  4. Assemble the Bark: Pour and evenly spread the melted chocolate over the flattened cookie dough. Optionally, sprinkle flaky sea salt on top to enhance flavor.
  5. Set the Bark: Place the assembled bark into the freezer and chill for 10 minutes until the chocolate topping is firm. Once set, cut or break into large chunks and enjoy your healthy cookie dough bark.

Notes

  • Use almond flour as the base to keep the recipe gluten-free and grain-free.
  • Cashew butter can be substituted with peanut butter if preferred.
  • Ensure coconut oil is fully melted before mixing with chocolate chips to achieve smooth topping.
  • Store the bark in an airtight container in the refrigerator or freezer to maintain freshness.
  • Flaky sea salt is optional but adds a nice contrast to the sweetness.
