Instructions

  1. Prepare baking sheet: Place a sheet of wax paper or parchment paper on a baking tray to prevent sticking during the assembling process.
  2. Mix filling: In a medium bowl, stir together the pumpkin purée, pumpkin spice, salt, and liquid stevia until combined. Add the oat flour and stir just until incorporated to form a mixture ready to shape.
  3. Shape truffles: With clean hands (rubbing fingers and palms with a little neutral-tasting oil if sticky), roll small portions of the mixture into bite-sized spheres. Arrange the spheres evenly on the prepared baking sheet.
  4. Melt chocolate: Place the chopped dark chocolate in a microwave-safe bowl. Microwave on HIGH for 30 seconds, then stir continuously for 1 minute. Continue heating in 10-second intervals, stirring for 1 minute between each, until the chocolate is fully melted and smooth. Keep the melted chocolate warm during assembly to prevent it from setting.
  5. Coat truffles: Using two forks, carefully dip each pumpkin filling sphere into the melted chocolate, allowing excess to drip off by rocking the sphere between the forks. Place each coated truffle back onto the wax paper. If desired, sprinkle a small pinch of flaky sea salt on top of each truffle immediately after dipping.
  6. Set chocolate: Once all truffles are coated, freeze them for 5-10 minutes or refrigerate for 15-20 minutes until the chocolate coating hardens.
