Ingredients

Scale

Chicken Marinade

  • 4 pieces Boneless, Skinless Chicken Breasts (Thighs can also be used)
  • 3 tablespoons Honey (Can substitute with maple syrup)
  • 2 tablespoons Lime Juice (Fresh lime preferred)
  • 1 tablespoon Lime Zest
  • 2 tablespoons Olive Oil (Avocado oil is a substitute)
  • 2 cloves Garlic (Minced, fresh preferred)
  • 1 teaspoon Cumin (Can substitute with coriander)
  • 1 teaspoon Smoked Paprika (Regular paprika can be used)
  • to taste Salt
  • to taste Pepper

Avocado Rice Base

  • 2 cups Cooked Jasmine or Basmati Rice (Cauliflower rice can be used for low-carb)
  • 1 medium Ripe Avocado (Ensure it’s ripe)
  • 1 tablespoon Extra Lime Juice
  • 1 tablespoon Olive Oil
  • to taste Salt

Garnishes

  • to taste Fresh Cilantro or Parsley
  • to taste Chili Flakes (Optional for heat)
  • 1 tablespoon Toasted Sesame Seeds

Instructions

  1. Prepare Marinade: In a bowl, combine honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper. Mix well to create a flavorful marinade for the chicken.
  2. Marinate Chicken: Coat the chicken breasts thoroughly in the marinade. Cover and refrigerate for 30 minutes to 2 hours to allow the flavors to infuse deeply into the meat.
  3. Grill Chicken: Preheat a grill pan over medium-high heat and add a splash of olive oil to prevent sticking. Place the marinated chicken on the grill and cook for 5-6 minutes per side until golden brown and fully cooked, reaching an internal temperature of 165°F (75°C). Baste occasionally with reserved marinade to keep the chicken moist and glossy.
  4. Prepare Avocado Rice: In a separate bowl, mash the ripe avocado until smooth. Stir in extra lime juice, olive oil, and a pinch of salt. Fold in the warm cooked jasmine or basmati rice gently until the mixture is creamy and evenly combined, forming a delicious base for the chicken.
  5. Assemble the Dish: Using a mold or ring, layer the avocado rice on each plate. Top with sliced grilled chicken breasts. Garnish with fresh cilantro or parsley, a sprinkle of lime zest, optional chili flakes for a bit of heat, and toasted sesame seeds for a nutty crunch.
  6. Serve: Drizzle extra lime juice over the dish just before serving to enhance the fresh, zesty flavors. Serve immediately and enjoy.

Notes

  • For a low-carb option, substitute white rice with cauliflower rice.
  • Chicken thighs can be used instead of breasts for a richer flavor and juicier texture.
  • Maple syrup is a good alternative to honey if preferred or for a vegan version.
  • Adjust chili flakes according to your preferred spice level.
  • Ensure the avocado is ripe to achieve a creamy and smooth rice mixture.
  • Marinating longer (up to 2 hours) enhances the flavor intensity.
