For the Filling:

- 2.2 lb lean ground beef (5% fat)
- 5.2 oz pepperoni, coarsely chopped
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp smoked paprika
- 2 tsp dried oregano
- 14 oz crushed tomatoes
- 2 tbsp tomato paste
- 0.5 oz flat-leaf parsley, chopped
- salt and ground black pepper, to taste
For Assembling:
- 6 wraps, any type
- 7.05 oz low-fat mozzarella cheese, shredded
- sauce of your choice (optional)
- Mix the spices: In a small bowl, combine the onion powder, garlic powder, smoked paprika, and dried oregano. Mix thoroughly to ensure the spices are well blended, creating a flavorful herb blend for the filling.
- Cook the beef: Place a large pan over medium-high heat and spray with oil. Add the lean ground beef, season with salt and ground black pepper to taste, and sear for about 5 minutes, stirring occasionally until no longer pink.
- Add pepperoni and spices: Add the chopped pepperoni and the mixed herbs and spices to the browned beef. Cook for an additional 2 minutes, stirring occasionally until the pepperoni is lightly golden and fragrant.
- Simmer the sauce: Add crushed tomatoes, tomato paste, and chopped flat-leaf parsley to the pan. Mix well and bring to a simmer. Cook for 2–3 minutes until the sauce thickens and reduces. Remove from heat when mixture is rich and not watery.
- Assemble the rolls: Lay the wraps flat and evenly divide the beef and pepperoni mixture among them. Sprinkle shredded low-fat mozzarella over each, add a drizzle of your favorite sauce if desired, and tightly roll each like a burrito.
- Cook the rolls: Place the wrapped rolls seam-side down on a baking tray or in an air fryer basket. Lightly spray with oil and sprinkle extra parsley if desired.
