This comforting and flavorful Lasagna Soup combines the hearty taste of traditional lasagna with the ease and warmth of a soup. Made with ground beef or spicy Italian sausage, fire-roasted tomatoes, classic Italian herbs, and creamy ricotta, this dish is perfect for a cozy dinner that satisfies all your lasagna cravings in a bowl.

Ingredients

Scale

Meat and Aromatics

  • 1 lb ground beef or spicy Italian sausage
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced

Tomatoes and Broth

  • 28 oz canned fire-roasted diced tomatoes
  • 15 oz tomato sauce (no added sugar)
  • 4 cups water or broth (vegetable or beef broth recommended)

Pasta

  • 8 oz broken lasagna noodles or small pasta shapes

Cheese Mixture

  • 15 oz ricotta cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano

Toppings

  • 2 cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Brown the Meat and Sauté Aromatics: In a large pot over medium heat, add the ground beef or spicy Italian sausage. Cook until browned and no longer pink. Add the finely chopped onion and minced garlic to the pot and sauté for 3-5 minutes until fragrant and the onions become translucent.
  2. Add Tomatoes and Simmer: Stir in the canned fire-roasted diced tomatoes along with their juices and the tomato sauce. Allow the mixture to come to a gentle simmer and cook for about 10 minutes to let the flavors meld together.
  3. Add Liquid and Pasta: Pour in 4 cups of water or broth. Bring the soup back to a boil and then add the broken lasagna noodles or small pasta shapes. Cook according to the pasta package instructions until al dente, typically around 8-10 minutes, stirring occasionally to prevent sticking.
  4. Prepare Ricotta Mixture: While the pasta cooks, in a separate bowl, combine the ricotta cheese with dried basil and dried oregano. Mix well to evenly distribute the herbs throughout the ricotta.
  5. Serve with Cheese Toppings: Once the pasta is cooked, ladle the soup into bowls and add a dollop of the ricotta mixture on top. Sprinkle each serving with shredded mozzarella cheese and finish with a light dusting of grated Parmesan cheese. Serve immediately while hot.

Notes

  • For a spicier kick, use spicy Italian sausage instead of ground beef.
  • Vegetarian version: substitute ground beef with plant-based meat and use vegetable broth.
  • For gluten-free, use gluten-free pasta shapes instead of broken lasagna noodles.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on the stove or microwave.
  • Adding fresh basil leaves as garnish can enhance the flavor and presentation.
