  • 1/2 cup freshly grated parmesan cheese
  • 2 cups packed fresh baby spinach
  • Salt & pepper, to taste

Instructions

  1. Sauté Aromatics: In a pot over medium-high heat, add olive oil, butter, and chopped onion. Sauté for 3-4 minutes until the onion becomes translucent and fragrant.
  2. Add Garlic and Orzo: Stir in the minced garlic, Italian seasoning, and orzo pasta. Continue stirring frequently and cook for 2-3 minutes to lightly toast the orzo and develop flavor.
  3. Simmer with Liquids: Pour in the chicken broth, lemon juice, and heavy cream. Stir well and bring the mixture to a gentle bubble. Reduce the heat to medium or medium-low and let it simmer uncovered for about 10 minutes, stirring often, until the orzo is tender and has absorbed much of the liquid.
  4. Add Chicken: Mix in the shredded cooked chicken, stirring thoroughly to combine all the ingredients.
  5. Finish with Cheese and Spinach: Remove the pot from heat. Stir in the freshly grated parmesan cheese and packed baby spinach. Cover the pot and let it sit for 3-5 minutes to allow the cheese to melt and the spinach to wilt. Season with salt and pepper to taste, then serve immediately.
