Main Ingredients
- 1 tablespoon olive oil

- Simmer with Liquids: Pour in the chicken broth, lemon juice, and heavy cream. Stir well and bring the mixture to a gentle bubble. Reduce the heat to medium or medium-low and let it simmer uncovered for about 10 minutes, stirring often, until the orzo is tender and has absorbed much of the liquid.
- Add Chicken: Mix in the shredded cooked chicken, stirring thoroughly to combine all the ingredients.
- Finish with Cheese and Spinach: Remove the pot from heat. Stir in the freshly grated parmesan cheese and packed baby spinach. Cover the pot and let it sit for 3-5 minutes to allow the cheese to melt and the spinach to wilt. Season with salt and pepper to taste, then serve immediately.
