Ingredients

Scale

Main Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 cup lentils
  • 2 cups diced potatoes
  • 4 cups vegetable broth

Spices

  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic and cook until softened and translucent, about 5 minutes, stirring occasionally to prevent burning.
  2. Add Lentils and Potatoes: Stir in the lentils and diced potatoes, mixing well to combine with the sautéed onion and garlic.
  3. Pour Broth and Season: Add the vegetable broth, cumin, and smoked paprika. Stir the ingredients thoroughly and bring the mixture to a boil over high heat.
  4. Simmer Soup: Once boiling, reduce the heat to low and let the soup simmer uncovered for 25 to 30 minutes, or until the lentils and potatoes are tender and cooked through.
  5. Final Seasoning and Serve: Season the soup with salt and pepper to taste. Stir well and ladle into bowls. Serve hot for a comforting meal.

Notes

  • For a creamier texture, partially blend the soup with an immersion blender before serving.
  • Use red or brown lentils according to preference; red lentils will cook faster and soften more than brown.
  • Adjust the thickness by adding more vegetable broth if desired.
  • This soup freezes well; store leftovers in an airtight container for up to 3 months.
