Potato Mixture

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (adjust to taste)
  • 1 large egg

Coating

  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs (plain or seasoned)
  • Oil for frying (vegetable or canola)

Instructions

  1. Mix Filling: In a large bowl, combine the mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped chives, garlic powder, black pepper, and salt. Beat in the egg and mix until the mixture is thoroughly combined and cohesive.
  2. Shape Bites: Using about 1 tablespoon of the mixture, roll into balls. If the mixture feels too soft to hold shape, chill it in the refrigerator for 15–20 minutes to firm up.
  3. Coat: Roll each potato ball first in all-purpose flour. For extra crispiness, you can double dip by dipping the floured balls in beaten egg and then coating them with breadcrumbs.
  4. Fry: Heat about 2 inches of vegetable or canola oil in a deep pan over medium heat, maintaining a temperature around 350°F (175°C). Fry the potato bites in batches, turning occasionally, until they are golden brown and crispy on all sides, about 2–3 minutes per side.
  5. Drain: Remove the fried bites from the oil and place them on a paper towel–lined plate to drain excess oil.
  6. Serve: Serve the loaded mashed potato bites hot alongside sour cream, ranch dressing, or your favorite dipping sauce.
