  • 3 Tablespoons Oil
  • 1 Lb Ground Beef
  • 1 Sweet Onion, chopped
  • 1 Orange Bell Pepper, seeded and chopped
  • 3 Garlic Cloves, chopped
  • 1 Small Head Green Cabbage, cored and chopped

Tomatoes & Spices

  • 14 oz Can Fire Roasted Diced Tomatoes
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Dried Oregano
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • Salt and Pepper, to taste

  • 2 Cups Shredded Cheddar/Jack Cheese

Instructions

  1. Sauté Meat and Vegetables: Heat 3 tablespoons of oil in a large pan with high sides or a Dutch oven over medium-high heat. Add 1 lb ground beef, 1 chopped sweet onion, and 1 chopped orange bell pepper. Cook, stirring occasionally, until the beef is browned and the onions are translucent, about 7-10 minutes.
  2. Add Garlic: Stir in 3 chopped garlic cloves and sauté for another 1 minute to release their aroma and flavor.
  3. Add Tomatoes and Spices: Mix in a 14 oz can of fire roasted diced tomatoes along with 1/2 teaspoon each of smoked paprika, dried oregano, garlic powder, and onion powder. Season with salt and pepper to taste. Stir everything well to combine.
  4. Cook Cabbage: Add the chopped cabbage on top of the mixture without stirring it in. Cover the pan and cook for 15-20 minutes over medium heat until the cabbage is tender and cooked through.
  5. Add Cheese and Melt: Sprinkle 2 cups of shredded cheddar/jack cheese evenly over the top of the cabbage. Cover the pan again and let the cheese melt, about 3-5 minutes. Serve hot and enjoy your low carb casserole.
