Sauce

  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)

Pasta & Garnish

  • 8 oz pasta (such as penne, rigatoni, or fettuccine)
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set it aside.
  2. Season & Sear Chicken: Season the sliced chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken slices and sear them until golden brown on both sides, about 3-4 minutes per side, making sure the chicken is cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté Garlic & Sun-Dried Tomatoes: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped sun-dried tomatoes and cook for an additional minute, stirring frequently.
  4. Prepare Sauce: Pour in the chicken broth, then add the heavy cream and freshly grated Parmesan cheese. Stir continuously until the Parmesan melts and the sauce becomes smooth and creamy. Season the sauce with Italian seasoning and crushed red pepper flakes if using. Adjust seasoning to taste.
  5. Combine Chicken & Pasta: Return the cooked chicken to the skillet with the sauce. Add the drained pasta and gently toss everything together to coat the pasta and chicken evenly with the sauce.
