Ingredients

Scale

Dry Ingredients

  • 2½ cups all purpose flour
  • 2½ tablespoon matcha powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon kosher salt

Wet Ingredients

  • 1 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1½ tablespoon brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg (room temperature)

Coating

  • ½ cup coarse sugar (such as turbinado)

Instructions

  1. Heat oven: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats to prevent sticking and ensure even baking.
  2. Sift dry ingredients: In a large mixing bowl, whisk together the all purpose flour, sifted matcha powder, baking soda, baking powder, and kosher salt. Set this mixture aside.
  3. Mix wet ingredients: In a separate large bowl, use a handheld electric mixer or stand mixer to cream together the room temperature unsalted butter, granulated sugar, and brown sugar until smooth and fluffy, approximately 1 to 2 minutes. Add the vanilla extract and the large egg, mixing until fully combined. Use a silicone spatula to scrape down the sides of the bowl to ensure even mixing.
  4. Combine dry and wet ingredients: Gradually incorporate the dry ingredients into the wet mixture, mixing just until the dough comes together. Avoid over-mixing to maintain a tender cookie texture.
  5. Prepare cookie dough balls: Pour the coarse sugar into a shallow bowl. Using a small ice cream scooper, cookie scooper, or tablespoon, portion out approximately 1.7 tablespoons (26 ml) of dough. Roll each portion into a ball with your hands and gently roll each dough ball in the coarse sugar until evenly coated. Place the coated dough balls onto the prepared baking sheets, spacing them 1½ to 2 inches apart to allow room for spreading during baking.
  6. Bake the cookies: Bake the cookies in the preheated oven for 8 to 10 minutes. The centers should appear soft while the edges turn slightly golden. After baking, allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire cooling rack to cool completely.

Notes

  • Make sure all wet ingredients are at room temperature to ensure proper mixing and texture.
  • Do not over-mix the dough once dry ingredients are added to keep the cookies tender.
  • Using coarse sugar for coating adds a pleasant crunch and visual appeal.
  • Spacing dough balls properly is important to prevent cookies from merging.
  • The baking time may vary slightly depending on your oven; keep an eye on the cookies as they bake.
