Ingredients

Scale

Base Ingredients

  • 150g golden Oreo cookies (or plain / gluten-free biscuits)
  • 60g vegan / dairy-free cream cheese

Coating

  • 200g dairy-free white chocolate

Decorations

  • Black food gel
  • Orange food gel
  • Strawberry laces / candy pencils (for the scarf)

Instructions

  1. Prepare Baking Tray: Line a baking tray with greaseproof paper and set it aside to keep your truffles from sticking.
  2. Crush Cookies: Place the golden Oreo cookies into a food processor or blender and blend until crumb-like. Alternatively, crush the cookies using a rolling pin if you don’t have an electric mixer.
  3. Mix Truffle Base: Transfer the cookie crumbs to a large mixing bowl. Add the vegan cream cheese and mix thoroughly until fully incorporated and the mixture is sticky enough to hold a shape when squeezed.
  4. Shape Snowmen: Weigh out 20g of the mixture and gently roll it into a ball. Then, roll 7g of the mixture into a smaller ball. Stack the smaller ball on top of the larger one to form a snowman shape. Repeat and arrange all snowmen on the lined baking tray.
  5. Freeze to Firm Up: Place the tray in the freezer for approximately 20 minutes or until the snowmen feel firm to the touch.
  6. Melt White Chocolate: About 5 minutes before removing the snowmen, melt the dairy-free white chocolate using a bain-marie method by placing it in a bowl over a saucepan of boiling water. Alternatively, melt in short bursts in the microwave, stirring frequently.
  7. Coat Snowmen in Chocolate: Remove the snowman truffles from the freezer. Using a toothpick or a fork, carefully dip or drizzle the melted white chocolate over them, ensuring an even coating. Let excess chocolate drip off. For a thicker coating, repeat the process as desired.
  8. Set Chocolate Coating: Return the coated snowmen to the lined tray and place them back in the freezer for 5 to 10 minutes to allow the chocolate to set quickly.
  9. Prepare Decorations: Tint some leftover white chocolate black with black food gel and orange with orange food gel. Transfer each colored chocolate into separate piping bags with a small tip cut off for detailed decoration.
  10. Decorate Snowmen: Pipe orange carrot noses, black eyes, mouths, and buttons onto the snowmen using the colored chocolates.
  11. Add Scarves: Cut strawberry laces or candy pencils to size and wrap them around each snowman’s neck as a scarf. Use a small dab of melted white chocolate to secure them in place if needed.
  12. Final Setting: Place the decorated snowmen back into the freezer for an additional 5 minutes to set all decorations firmly.
  13. Serve and Enjoy: Remove from freezer and enjoy these festive, creamy, and delicious no-bake snowman truffles!
