Base Ingredients

- 60g vegan / dairy-free cream cheese

- Prepare Baking Tray: Line a baking tray with greaseproof paper and set it aside to keep your truffles from sticking.
- Crush Cookies: Place the golden Oreo cookies into a food processor or blender and blend until crumb-like. Alternatively, crush the cookies using a rolling pin if you don’t have an electric mixer.
- Mix Truffle Base: Transfer the cookie crumbs to a large mixing bowl. Add the vegan cream cheese and mix thoroughly until fully incorporated and the mixture is sticky enough to hold a shape when squeezed.
- Shape Snowmen: Weigh out 20g of the mixture and gently roll it into a ball. Then, roll 7g of the mixture into a smaller ball. Stack the smaller ball on top of the larger one to form a snowman shape. Repeat and arrange all snowmen on the lined baking tray.
- Freeze to Firm Up: Place the tray in the freezer for approximately 20 minutes or until the snowmen feel firm to the touch.
- Melt White Chocolate: About 5 minutes before removing the snowmen, melt the dairy-free white chocolate using a bain-marie method by placing it in a bowl over a saucepan of boiling water. Alternatively, melt in short bursts in the microwave, stirring frequently.
- Coat Snowmen in Chocolate: Remove the snowman truffles from the freezer. Using a toothpick or a fork, carefully dip or drizzle the melted white chocolate over them, ensuring an even coating. Let excess chocolate drip off. For a thicker coating, repeat the process as desired.
- Set Chocolate Coating: Return the coated snowmen to the lined tray and place them back in the freezer for 5 to 10 minutes to allow the chocolate to set quickly.
