  • 12 slices mozzarella cheese
  • 6 ounces pepperoni

Instructions

  1. Prepare the butter mixture: In a medium-sized bowl, combine the very soft unsalted butter with grated parmesan cheese, garlic powder, and dried Italian seasoning. Mix thoroughly until smooth and well combined to create a flavorful spread for the bread.
  2. Spread the butter mixture: Evenly spread the prepared butter mixture over one side of each bread slice. Place the buttered bread slices butter side up onto a sheet tray and set aside until ready to assemble the sandwiches.
  3. Assemble the sandwiches in the skillet: Heat a skillet over medium-low heat. Place one slice of bread butter side down into the skillet. Layer one slice of mozzarella cheese on top of the bread, then arrange 6 slices of pepperoni over the cheese. Add another slice of mozzarella, followed by 6 more pepperoni slices, and a final slice of mozzarella cheese to form layered fillings.
  4. Top the sandwich: Place another slice of bread on top of the layered ingredients, butter side up. Note that there may be leftover pepperoni which can be reserved or used for another sandwich.
  5. Cook and melt the sandwich: Cover the skillet with a lid to trap heat and help melt the cheese. Cook for about 3-5 minutes or until the bottom of the bread is golden brown. Carefully flip the sandwich using a spatula, cover again, and continue cooking until the other side is also golden brown and the cheese is fully melted in the center.
  6. Repeat for remaining sandwiches: Continue assembling and cooking the rest of the sandwiches by repeating the steps above.
