Quesadillas
- 4 medium flour tortillas
- 1 ½ cups shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese (optional for extra flavor)
- 1/2 cup sliced pepperoni
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1 tablespoon olive oil or butter (for grilling)
Dipping Sauce
- 1/2 cup pizza or marinara sauce
- Heat your pan: Place a large skillet over medium heat and add a little olive oil or butter to prevent sticking and to give the quesadilla a crispy, golden crust.
- Assemble the quesadilla: Lay a tortilla flat on a clean surface and evenly sprinkle half of it with the shredded mozzarella and cheddar cheeses. Add a layer of pepperoni slices on top, then sprinkle with dried oregano and garlic powder. Fold the tortilla in half to enclose the filling.
- Cook until crispy: Transfer the folded tortilla to the heated skillet. Cook for approximately 2 to 3 minutes on each side, pressing gently with a spatula to ensure even browning and melting of the cheese. The quesadilla should be golden and crispy when done.
- Repeat & slice: Repeat the assembly and cooking process with the remaining tortillas and ingredients. Once cooked, let the quesadillas cool slightly before slicing each into wedges for easy serving.
- Serve with sauce: Serve the warm quesadilla wedges with a side of pizza or marinara sauce for dipping, adding a delicious tangy contrast to the cheesy, savory filling.
Notes
- You can customize your quesadilla with additional fillings like bell peppers, onions, or jalapeños for extra flavor and texture.
- If you prefer a spicier kick, add crushed red pepper flakes or swap pepperoni for spicy sausage.
- Use whole wheat or gluten-free tortillas to adapt this recipe for dietary needs.
- For a vegetarian version, omit pepperoni and add mushrooms or spinach instead.
- Ensure the cheese is fully melted before removing from skillet to avoid falling apart when sliced.
