Instructions

  1. Preheat oven and prepare salmon: Preheat your oven to 400˚F (205˚C) and line a baking sheet with parchment paper for easy cleanup.
  2. Bake the salmon: Place the salmon filet skin-side down on the baking sheet. Drizzle with 1 tablespoon olive oil, then sprinkle with ½ teaspoon kosher salt and ¼ teaspoon pepper. Bake for 15-20 minutes until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C). Remove from oven and let it rest until cool enough to handle.
  3. Flake the salmon: Using two forks, carefully flake the cooled salmon into a large mixing bowl. Discard any skin and bones.
  4. Mix patty ingredients: To the bowl with the flaked salmon, add 2 large eggs, 1 teaspoon minced garlic, ¼ cup chopped yellow onion, ½ cup dry bread crumbs, 1 teaspoon Old Bay seasoning, and ½ teaspoon kosher salt. Stir until all ingredients are thoroughly combined.
  5. Form patties: Divide the mixture into 8 equal portions. Shape each portion into a patty approximately 2 inches wide and ½ inch thick.
  6. Pan-fry patties: Heat 1 tablespoon olive oil in a large skillet over medium heat. Place patties in a single layer without overcrowding; cook in batches if necessary. Fry each side for 3-5 minutes until golden brown and crisp.
