Cookies Base

  • 1 cup Unsalted butter, softened
  • 1 cup Brown sugar, packed
  • 1/2 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Graham cracker crumbs
  • 1 cup Chocolate chips
  • 1 cup Mini marshmallows
  • Extra chocolate chips and mini marshmallows for topping, to taste

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper for easy removal.
  2. Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This creates a smooth base for the cookie dough.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract to enhance the flavor of the dough.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt ensuring even distribution.
  5. Combine Wet and Dry: Gradually add the dry flour mixture to the butter mixture, mixing until just combined. Be careful not to overmix to maintain a tender texture.
  6. Fold in Crumbs and Chips: Gently fold in the graham cracker crumbs and chocolate chips evenly throughout the dough.
  7. Layer the Dough: Spread half of the cookie dough mixture evenly into the prepared baking pan, pressing down gently to form an even layer.
  8. Add Marshmallows Layer: Sprinkle the mini marshmallows evenly over the cookie dough layer, creating a gooey middle layer.
  9. Top with Remaining Dough: Spread the remaining cookie dough gently over the marshmallows to cover them completely.
  10. Add Final Toppings: Top the bars with additional chocolate chips and mini marshmallows for extra gooey, melty goodness.
  11. Bake: Bake in the preheated oven for 25-30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  12. Cool and Slice: Allow the bars to cool in the pan for about 10 minutes. Then lift them out using the parchment paper (if used) and let them cool completely on a wire rack before slicing into squares.
  13. Serve and Enjoy: Enjoy your delicious S’mores Cookie Bars with family and friends as a delightful treat or dessert.

Notes

  • Do not overmix the dough after adding flour to keep the bars tender.
  • Using parchment paper makes it easier to lift the bars out of the pan for slicing.
  • For extra gooey bars, add more mini marshmallows on top before baking.
  • Store leftover bars in an airtight container at room temperature for up to 3 days or refrigerate.
  • These bars can also be frozen for up to 1 month; thaw before serving.
