Strawberry Crunch Cheesecake Tacos are a delightful no-bake dessert that combines creamy cheesecake filling with crunchy graham cracker shells and fresh strawberries, topped with toasted pecans for an irresistible treat perfect for any occasion.

Ingredients

Scale

Cheesecake Filling

  • 8 ounces (226g) cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup (60ml) heavy cream
  • 1 cup (150g) fresh strawberries, finely chopped

Graham Cracker Shells

  • 1 1/2 cups (180g) graham cracker crumbs
  • 1/4 cup (50g) unsalted butter, melted

Toppings (Optional)

  • 1/4 cup (35g) chopped toasted pecans
  • Additional chopped strawberries for garnish

Instructions

  1. Prepare the cheesecake filling: In a medium bowl, beat the softened cream cheese until smooth and creamy. Add the granulated sugar and vanilla extract, and continue mixing until well combined.
  2. Fold in cream and strawberries: Gently fold in the heavy cream and finely chopped strawberries until the mixture is evenly distributed throughout the cheesecake base.
  3. Make graham cracker shells: In a separate bowl, mix graham cracker crumbs with melted butter until the mixture resembles coarse sand and is well-coated.
  4. Form taco shells: Divide the graham cracker mixture into 8 small taco-shaped molds or a muffin tin. Press firmly into the sides and bottom to create firm shells.
  5. Chill shells: Refrigerate the prepared shells for at least 2 hours, or until they are firm and hold their shape securely.
  6. Add cheesecake filling: Remove the chilled shells from the fridge and carefully spoon or pipe the cheesecake filling evenly into each taco shell.
  7. Add toppings: Sprinkle chopped toasted pecans over the filling if desired.
  8. Garnish and serve: Garnish with additional fresh chopped strawberries for extra freshness, serve chilled, and enjoy the creamy, crunchy, and fruity flavors in every bite.

Notes

  • You can substitute pecans with walnuts or almonds based on preference or allergies.
  • For a tangier flavor, add a teaspoon of lemon juice to the cheesecake filling.
  • If you don’t have taco-shaped molds, a muffin tin or small bowls can work to shape the graham cracker shells.
  • Ensure cream cheese is fully softened to avoid lumps in the filling.
  • Store assembled tacos in the refrigerator and consume within 2 days for best freshness.
