Ingredients

Scale

Sausage and Seasoning

  • 1 lb ground pork sausage (browned and crumbled)
  • 3/4 tsp salt
  • 1/2 tsp black pepper (freshly ground preferred)
  • 1/4 tsp cayenne pepper

Gravy Base

  • 3 tbsp butter (room temperature for easier mixing)
  • 1/2 cup flour (King Arthur flour recommended)
  • 4.5 cups milk

Biscuit Topping

  • 2 cans (7.5 oz each) refrigerator biscuits or homemade drop biscuits

Instructions

  1. Prepare the Oven and Baking Dish: Preheat your oven to 350°F (175°C). Spray a 13 x 9 inch glass baking pan with oil cooking spray to prevent sticking.
  2. Cook the Sausage: In a medium-sized pot, brown the ground pork sausage over medium heat, breaking it into crumbles as it cooks. Once fully cooked, transfer the sausage to the prepared baking dish. Use a paper towel to blot out any excess grease from the sausage in the dish.
  3. Make the Roux and Gravy: Add butter to the same pot with the sausage drippings and melt over medium heat. Stir in the flour, salt, black pepper, and cayenne pepper to make a roux. Cook this mixture for 2-3 minutes, stirring constantly, until it begins to slightly brown. Gradually whisk in the milk until the mixture is smooth. Continue cooking on medium-low heat, stirring often, until the gravy thickens to a creamy, lump-free consistency.
  4. Assemble the Casserole: Pour the freshly made gravy evenly over the sausage in the baking dish. Separate the refrigerator biscuits and cut each into fourths, or use homemade biscuit dough shaped into small pieces. Evenly place the biscuit pieces on top of the gravy layer.
  5. Bake: Bake in the preheated oven for 25-30 minutes, or until the biscuits are golden brown and cooked through. Serve warm for a comforting breakfast or brunch dish.

Notes

  • You can use homemade biscuit dough instead of canned biscuits for a more rustic texture.
  • Adjust cayenne pepper and black pepper to your heat preference.
  • Blotting excess grease from sausage prevents a greasy casserole.
  • Whisking continuously while adding milk helps prevent lumps in the gravy.
  • Serve with eggs or fresh fruit for a complete breakfast.
